Arugula is a peppery little green that is highly sought after at all of our farmers markets. Some people find it’s flavor spicy, or a little bitter, while others think it has a “peppery-mustardy” flavor. Arugula goes by many names. Some you may have heard include roquette, garden rocket, or salad rocket. Arugula is very low in calories and is also a good source of vitamins A and C, folate, calcium, and magnesium. Arugula has many uses. Here at the farm it is sold on it’s own and also as an ingredient in our salad mix. It is great in a salad with some aged parmesan, olive oil, and good salt, but it can also be lightly sautéed or wilted. To store: wash in a salad spinner until the water is clear and store in a plastic bag with a paper towel and use within 5-7 days.
